The plums and grapes, however, were an unmitigated disaster. Admittedly, the plums were very ripe when I put them in. However, after 24 hours they were fermenting and swarming with fruit flies (and yes, I zipped the screen closed - a few flies had gotten inside and several more were swarming around the outside). Now, it's possible that I did it wrong. The dehydrator did come with some instructions, which I did not read and which I now can't find. That said, I bought this primarily for making prunes and raisins and have concluded that there is no way this unit will work for either of those as it simply does not dehydrate juicy fruits fast enough to keep ahead of decomposition. I lost about 2/3 of the plum crop and put the remainder in the oven to dry. Fortunately I only did a small test batch of grapes. Once again, the sliced apples have come out very nice and that's why it still got two stars from me. I'm super disappointed because I loved the idea of a solar food dehydrator! How long will it take in this unit?** A: This is not a question that can be answered with a specific answer. It will depend on the humidity in the air, air flow and the moisture content of your kale leaves. It is just allowing natural air flow to dry out the objects you are drying so there are lots of variables. **Q: How does this product do with drying jerky? I feel like it would take a very long time and not be hot enough to prevent bacteria growth.** A: I believe jerky requires significant heat to dry it safely. I think it would rot in this device, and develop dangerous bacteria. **Q: Does this dehydrator need to be hung or can it be used as a free standing unit?** A: I will hang mine. Simple enough repair. Took the top apart then turned the netting right side out.
