**Q: How long will it last unopened and sealed**
A: The biggest problem I have had is it well start evacuate the salt and get crusty on the outside after a few weeks.  Especially where sliced.  I an not sure how to prevent it.  Keep it in sealed bag and it will last ridiculously long since it is so low in water content.  Treat it like a hard cheese and just keep it cold until ready to use.  I would say a few month refrigerated and up to a year in a 0 F freezer and even then it just oxidizes mildly.  You just have to use it soon after thawing like any meat and never refreeze it.  I only use 4 to 8 oz at time so I cut it into about a several sections and freeze a few immediately for later on.  Cured meat is a lot safer then uncured meat !!

**Q: How should it be stored?**
A: If it is in its vacuum-sealed package, it can be stored for many months in the fridge. When you first open the package, allow the Speck to "breathe" at room temperature for a few hours before eating it as this enables the Speck to develop its full aroma.  Once unpackaged Speck can be kept in the fridge for a few weeks wrapped in a piece of cloth or placed between two soup dishes, always making sure it isn't placed next to pungent foods.

**Q: How many ounces per serving, and how much sodium per serving?**
A: It depends how hungry you are.  It is one piece that weighs about 5 pounds, ready to be sliced into whatever size/s you wish.
