Review: adds richness and umami to many foods - I've used this for a number of things, but my current favorite is stirring a good plop of it into a freshly cooked pot of white beans, along with some black pepper. It takes care of any salt to be added as well as giving a wonderful umami richness to the broth. Now that I've found it, this is a refrigerator staple.

**Q: Is this a ready miso glaze or do I need to add mirin and sake?**
A: It is a paste.  A very thick paste.  If you want a glaze you will have to add the same and mirin.

**Q: Is this product made in Japan or China?**
A: It says on the label: Manufactured by Hikari Miso, Ltd., Nagano, Japan. PRODUCT OF JAPAN. It does not say China anywhere so should be Japan. It’s great for marinating and kind of sweet, not overly salty like the white miso. Hope this helps.

**Q: What is the sodium content in this?**
A: The 14.1oz (400g) package contains 22 servings (about 1 tbsp (18g) each. Sodium is listed at 470mg (20%DV).
