Review: I was skeptical, but this combo leveler / tamper works well & reduces channeling when pulling a shot - When I saw some of these for over $100, I thought it was all hype. when I saw this brand at 1/3 or 1/4 of the price, I thought this would be shoddily made. But this worked exactly as shown and reviewers said. The leveler quickly evens out the espresso grounds to avoid unevenness that leads to channeling when pulling a shot. The tamper on the other side, quickly and effectively compresses the puck. It is adjustable, but it took me a few minutes to figure out how to adjust it - loosen the middle a bit, then unscrew the leveler and tamper sides a little at a time, and retighten the middle. the tamper side has some numbers showing so you can adjust the size. a small quibble is that some espresso grounds get caught in the leveler/tamper making it a bit harder to clean. I followed that tutorial and it worked perfectly. In summary, my method (to recalibrate after disassembly and cleaning) now looks like this: 1. Apply funnel ring (purchased separately) to the portafilter (PF). 2. Fill the PF with the usual dosage of espresso (18-20 grams). 3. Use a needle, toothpick, chopstick, or other coffee distribution and clump-removal device (sourced or purchased separately) to distribute the grounds within the PF. 4. Holding the funnel ring firmly against the PF, tap the PF flatly and firmly against the counter until the ground espresso is about level with the top edge of the PF. 5. Remove the funnel ring from the PF, then use the palm tamper/distributor's distributor side (the wavy side, at the lowest height setting) to lightly tamp the espresso puck, applying a few twists or spins to distribute the espresso grounds and create a smooth top surface of the espresso puck. 6. Attach and lock the PF to the group head. 7. Remove the PF from the group head and examine the marks made by the shower screen atop the espresso puck. 8. Unscrew the black ring a few turns on the flat tamper side of the palm tamper/distributor; unscrew the shiny tamper a few turns; screw the black ring back down. 9. Tamp the espresso puck. Remove the tamper from the PF and examine the puck. 10. Repeat steps 8 and 9 with very small adjustments to the tamper height until the tamper just barely removes the shower screen imprint from the top of the espresso puck, leaving a smooth surface. 11. It's not perfectly sized for my baskets and I suspect that is true for most 58mm portafilter baskets, but I would have to pay a lot more for a more precisely sized leveler, and so this is a great compromise. Some people want to use this to skip tamping, and I think I've seen reviews saying that still works. For me, I use this primarily as a leveler and still tamp separately afterwards. The edges can be sharp (THEY TELL YOU IN THE PRODUCT DESCRIPTION THAT IT IS SHARP) and so I avoid wiping it down or swiping it with my skin, and instead use a wash cloth to get any leftover coffee ground off.
