I easily pressed a block of tofu yesterday. Simply set the tofu in, put the top on and let it sit. I did notice it pressing unevenly at first and after having watched the demo video on their site I knew to just give a few nudges, even it out and reset the lid.I swung by the kitchen every so often and dumped out the surprising amount of water that had collected. After a few times no more water was present and I began marinating over night with the attached lid. Pressing took maybe 30-45 minutes for me.It really couldn't have been easier.I haven't tried the #2 spring yet, but I do make fresh cheeses often and will likely use it soon. After pressing tofu I really can't imagine it not performing well on cheeses.Pros: Pressed out a lot of water. Resulting tofu was dense and accepted marinades well.Cons: Price was pretty steep for a few pieces of plastic and a spring. It works well so I won't complain to much about it. I also wish it had drain holes of some sort so I could just place it in the sink or on a bowl. The amount of fluid released from the tofu made me think it might eventually overflow. ### ⭐⭐⭐⭐ 4.0 out of 5 stars excellent gadget *by S***L on Reviewed in the United States on August 4, 2013* I love this tofu press. It is the perfect shape to hold almost every brand of commercial tofu, and it will also press pickles and cheeses using one of two tension springs. I had another of these a year ago but it broke, and I missed it so much I needed to get another. If I have one complaint about it, and this is why my first one broke, it is that the arms that secure the top spring plate are thin plastic, and if you happen to bump or drop it in those spots the whole thing is useless.
