Raisin River Apple Wood smoked center cutbacon comes from ONLY DuBreton pork whichis one of the finest natural pork companies.The pork is vegetable grain fed and raisedwithout antibiotics ever. The feed consists ofcorn, soybean meal, wheat, bread flour, peas,vitamins and minerals. Single family growing of the hogs gives traceability right back to the farm and aconsistent product all the time. Only the best pork bellies are chosen for Raisin River.This bacon comes from the perfect center cut square belly (all bellies aresquare cut for uniform slicing and for theirleanness) that is then traditionally cured utilizingreal maple syrup. They are then vacuum tumbledin a bin for days to develop the bacon's uniqueflavor. The bellies are then smoked for up to 12hours with chunks of charred apple wood at hightemperatures for a great apple wood smoke flavor.Next, they are placed in a European press whichutilizes minimum pressure to shape the belly forslicing. The bacon is sliced thick. The machine does not shatter thebelly meat which means much less shrinkageafter cooking. This bacon will shrink 20% or lessover all injected bacon.
