I read a review that said it was much thinner than the Date Lady.** A: Date Juice concentrate is a viscous, dark brown water extract of dried dates. It is concentrated to 70/72° brix. It is not. **Q: Does it ferment over time if not refrigerated?** A: It dose not say to refrigerate after opening. So you probably don't have to. I always refrigerate after opening because it can get up to 110 degrees in the summertime. I don't want to take a chance of loosing it because it's gone bad. **Q: How long will this last after opening?** A: If you keep it refrigerated and keep the lid on,, indefinitely the expiration date is not defined. I once had a bottle of date syrup in the fridge for 4 years. No loss of flavor.. it still tasted great and worked well for my dessert. **Q: Where on the ORGANIC Date Syrup label does it list the FIBER % ? My label reads: Not a significant source of standard of dietary fiber.** A: Right you are. My label also says "Not a significant source..." Another package of dates I have claims about 1/2 gram of fiber per date. Yet another source (per internet search) claims 1 gram fiber in a tablespoon of syrup.
