The packer probably drops the "20" before "26" because they don't have any cans from 1926 lying around. I'd use the clam juice before 2026 but I think you'll be o.k. Just please check for the standard signs of a bad can, i.e. Swelling at the joints and top and bottom and signs of age. If the can looks older than you are, I'd not use it. I have not had any problems with the many cans of this clam juice that I've bought and used in making very delicious chowder. **Q: If you had an issue with gluten, would you use this product in say, stir fry? (i.e. manufactured with equipment used for products that contain wheat).** A: I do not have an issue with gluten so I cannot answer that question. I made clam chowder soup with mine. The most familiar signature food of my region is a creamy, white clam chowder. Let me say at the start that chowder is a soup. It is not the lumpy wallpaper paste served in restaurants far and wide these days. Chefs started using bacon for a flavoring (the early recipe's called for salt pork) and the fat in which to saute the onions for the chowder. To bind the fat chefs use significant quantities of flour. The potatoes and clams then go into the pot and get drenched in milk. The milk thickens into a pasty mess subverting the flavor of the ingredients. Adding La Monica clam juice adds flavor and turns that gloppy mess into an actual, palatable, luscious soup that tastes of clams and the sea and loses that pasty taste that emphasizes the flour over everything else.
