I found people using Chinese chefs knives for pretty much everything they need to do for cooking. It chops, slices, cubes, it does it all. Additionally, it has a large surface area so moving my food around is waaaaay easier than the other knife I used to use. My unit came VERY sharp. My goodness I get very excited to use this knife which is not something I can say for my old American knives. I now want to collect these types. Either way, it is a great knife to have in every kitchen.
