Flavor is superbly meaty. Best way to describe it is a top-of-the-line dry aged steak but even more intense. Marbling was amazing (fillet is normally without much marbling). Leaving you with a wonderful fall apart texture. Both "10oz" steaks I got were less than 9.5oz.
