Naturally, bottarga is an amber gold caviar made from the roe of striped mullet. Our bottarga is salt cured and air dried over a period of time using ancient methods with modern techniques. I love a certain saltwater flavor to a lot of dishes, especially pizza and pasta. This stuff has the perfect touch of smoked, seafood and briny flavor I was looking for. The taste is pronounced enough to make it's presence know but never overpowers the actual dish like anchovies have a tendency to do. I only use a sprinkling but it definitely adds a certain depth to dishes. Try it in tuna melt to add more depth and wow your taste buds.
