There may be more info and recipes on their web site . **Q: How many egg yolks?** A: It makes a little over 6 large yolks (the directions say 8 grams dried egg yolk = 1 large egg and the package contains 50 grams). **Q: Can you make mayonnaise with this product?** A: I tried twice to make mayonnaise with this. It did not work either time. **Q: Will it make hollandaise?** A: We haven't tried it ourselves but it should work.
