It's very well made, heavy, and is my go-to for most all chopping needs... **Q: What steel is used** A: It is made of High-Carbon steel which is very hard and resistant to abrasion. It is used in cutting tools. It is however not rust proof like stainless steel. So, always dry the knife after use. **Q: Can this be used to cut through bone?** A: I have used this knife to fairly easily chop off chicken wing tips. It cut through bone (knuckle) without raising the knife off the cutting board. **Q: Can it cut through frozen meat? If so, with a sawing motion, or like a guillotine?** A: This is a very vague question. Will it chop through a frozen pork chop with one swift blow? Yes. Will it do the same on a frozen roast? It cuts through food quickly and easily. I had been looking for a cleaver for a while and I couldn't find one I Iiked at a reasonable price. I decided to take a chance since I have bought Mueller products before and found them well made and well designed. This knife is no different. It is impressive, frightening, and exactly what it claims to be. My one complaint is the stain onthe leather holder is not very well done. It looks like someone forgot to finish staining the leather in some places. For me, this knife lives in a drawer out of sight and far away from curious hands, so that is not a problem.
