Seasoning - a Natural Coating that Improves with Use In 2002 Lodge introduced pre-seasoned cookware, known as the Lodge Logic range, into their ever-evolving assortment. This eliminated the requirement for seasoning prior to initial usage and ensured that Lodge cookware was ready to use as soon as it was removed from its packaging. At the time this was an industry first. It has since become standard practice. The Lodge seasoning procedure is a multiple-step process in which vegetable oil is applied via an electrostatic spray system that coats the cookware. It is then baked into the iron in commercial ovens at temperatures of 600 degrees Fahrenheit (315 degrees Celsius). This allows the oil to penetrate deeply into the pores of the iron and provides the easy-release properties that are equivalent to a natural non-stick surface. Crucially, this process eliminates the health concerns that are associated with chemical non-stick coatings. The foundry-based seasoning process is far superior to what can be achieved at home. The oil is more advanced, the spray system coats the cookware more uniformly and the oven temperature is substantially hotter. As a result of this, a ‘bubble’ or ‘blister’ of oil may form at the southern-most point of the product and be initially visible when unpackaged for use. The ‘bubble/blister’ can be rubbed-off and will leave a brown spot directly underneath it. This is not rust - it is a seasoned spot that is indicative of the varnishing stage of the coating process. It will turn black with usage, as does home-seasoned iron when employed repeatedly. It is not the intention of Lodge to produce cookware that appears as if a non-stick coating has been applied to it. The black patina given to the products by the seasoning process is not paint, is not a synthetic polymer coating, nor is it enamel - all of which modify the valuable characteristics of cast iron. It is, in fact, vegetable oil that has been baked into the cookware. This is a functional application; it isn’t a cosmetic one. Care and Use Instructions - Follow these to Ensure that Your Lodge Cast Iron Lasts a Lifetime! Care 1) Hand wash and dry immediately - even before the very first use. 2) Allow your cookware to cool naturally prior to cleaning (plunging hot cast iron into water may cause damage). 3) Rub a small amount of vegetable oil into the product after every wash. Use just enough to restore the sheen, without it becoming ‘sticky’. This reinforces the natural seasoning and protects the cast iron from moisture (which can lead to rusting). Use 1) It is safe to use metal, wood or silicone utensils with your cookware. 2) Some foods (especially eggs) may stick to some degree during initial usage. It is advisable to employ extra oil or butter until the seasoning has built-up. 3) Acidic foods such as tomatoes, beans and certain sauces can damage the seasoning and should be avoided until the natural non-stick layer has matured. 4) Cast iron rarely needs to be placed on an above-medium heat setting if adequately pre-heated. On occasions when a higher cooking temperature is required, elevate the heat gradually and apply oil just prior to adding the food in order to prevent sticking. 5) Holders/mitts are essential when using the handles. Protect countertops with trivets. Cleaning - to Soap or not to Soap? Lodge cookware reaches 400 degrees Fahrenheit (204 degrees Celsius) in 4 minutes on a medium heat setting and is sterile at 212 degrees Fahrenheit (100 degrees Celsius), so soap is often not necessary. However, if using it is preferred, wash with mild soapy water and dry immediately before adding oil. Dishwashers, strong detergents and metal scouring pads will remove seasoning, so are not recommended. How to Reverse Rusting Without protective seasoning, iron can rust. If this does occur, it can be easily fixed by scouring the rust, rinsing and drying the cookware, and then applying a small quantity of vegetable oil. Review: I love this skillet. - This skillet is great. It's quite small - the cooking area is just about big enough for a couple of eggs, or a small steak, but it's a convenient size for my student room. It's good and solid, and very weighty. If you haven't used cast iron skillets before, it's important to remember that it's non-stick properties come from a thin layer of polymerised cooking oil 'season' - the heat and the iron causes unsaturated fats to join together to in a film. I'd recommend cooking with sunflower oil, which I found to give a good seasoning, and cooking hot. When the pan's well seasoned, it's a lot like a non-stick layer, and water runs off it. It comes pre-seasoned, but I'd also suggest brushing a very light layer of sunflower oil on it whenever you're roasting food in the oven and leaving it in there for a couple hours to build the season. The layer of oil should be so thin it looks like it's hardly there - if you use a cloth to wipe most of it off before you put it in the oven, and put it in upside down, that works good. I love this skillet.

I have refused to use non stick or aluminium pans for several years on health grounds and was really pleased when the newer ceramic non stick pans came onto the market. However, just like non sticks, the ceramic pans don't stay non stick for long. Plus I have a new induction cooker and only the expensive premium ceramic pans work on induction. ( I did try a couple of cheaper ceramic induction pans but the quality was appalling. One small ceramic "induction" pan had so little iron content that a magnet barely gripped and it buzzed loudly on the hob, another simply didn't register as suitable for use on an induction hob at all). Plus I'm just so fed up with forking out for new pans when the ceramic non stick fails, so I decided to go back to basics and use iron again. The first time I used the pan, even after extra seasoning, I had a mess of stuck eggs and nearly gave up, but having read advice and reviews on here, I kept working on the seasoning, oiling and storing the pan in the oven, and it is now extremely effective and naturally non-stick. My partner is forbidden to wash it up so I can be sure no washing up liquid ever comes near it. My next purchase is going to be a iron skillet or paella pan to use as a substitute wok. It's also inspired me to dig out old inherited iron baking trays and frying pans and get them seasoned and back into use. All are much better than their modern equivalents. I've since discovered De Buyer pans which can be a good price if you check desertcart.fr and desertcart.de, and they are much, much better.

**Q: What is the width of the base? does this qualify as a thick bottomed skillet? Thanks!**
A: Hi.  It's a good size. It must be nearly 11 inches in diameter.It is a think bottomed skillet.  Be warned, it's a heavy pan.  I'm delighted with it.  Rinse with water to clean, no detergent and coat with oil before I put it away.I have it a couple of years now and still as good as the day I bought it.To summarise, buy it.  I'd give it a 10 to be honest. Hope this helps.

A: I emailed them and the reply was as followed;

We do not use any animal product in our seasoning. We use a highly refined soy-based vegetable oil.

**Q: Is it compatible with an induction hob?**
A: Induction stove works with cast iron which this skillet is made of.

**Q: can this fit a standard Camembert cheese ?**
A: No it’s tiny, just enough to bake an egg 🍳

This skillet is great. It's quite small - the cooking area is just about big enough for a couple of eggs, or a small steak, but it's a convenient size for my student room. It's good and solid, and very weighty. If you haven't used cast iron skillets before, it's important to remember that it's non-stick properties come from a thin layer of polymerised cooking oil 'season' - the heat and the iron causes unsaturated fats to join together to in a film. I’m a Lodge fanboy. Not sure why but I just love their pans and Dutch ovens. They’re not always the best to use, and the finish can vary, some castings being quite rough and others having imperfections, but the steel is nice quality and they are a good investment Despite the factory seasoned claims I’ve always found the seasoning to be inadequate out of the gate, so I wash mine, and then season lightly with tallow or beef dripping several times over before use. This little pan is quite diddy, enough for maybe four fried eggs, or a batch of fried mushrooms for example. It’d be a little too small for the average rump or rib-eye steak but you could sear up two small fillet steaks at the same time. It’s cute, it’s a nice light size when you just want to fry a few things, and washing it up and re seasoning are a breeze. For £12.99 it’s competitively priced against the Chinese cast iron pans of this size in TK Maxx. I’d rather have the Lodge all day long. Good ol’ USA products to last a lifetime.
