BUT I have also resharpened German knives on it. It takes a while as you have to use the coarse wheel to change the angle of the German knife to the Japanese angle, and then use the fine wheel to finish the sharpening. The second is for honing, a fine grinder which produces a sharper blade. The third is a polishing stone, very fine and produces the shapes the blades, but to be honest I find the two stage system works fine and produces very sharp blades. In fact, when used with good quality Japanese blades, they are extremely sharp, to the point that my wife refuses to use the knives now, and the three stage really isn't necessary. The grinder itself, by the way, is extremely good, not only for my Japanese knives but Imhave also used it to convert and sharpen my Sabatier knives, and the result is excellent. A really good professional product and well worth the price.
