The pearls break down and carmelize beautifully - not a hard crunch, but that unctuous, slightly crispy caramel goodness in each bite. Im not sure if, as in the description, it's the 100% beet sugar, the size, the density, or what, but it just works perfectly. I've tried two other brands, and nothing compares: Lars is too dense, and results in a hard candy crack that is unpleasant, and the other brand became sticky and gummy. Another plus is the great price.
