It imparts a very rich, deep flavor and can be used in almost any stir fry dish .... and a little bit goes a long way. Can be nice to use when having guests over to dine because they might find the flavor interesting and different, perhaps beguiling, especially if unfamiliar with it. XO sauce has many ingredients in it. To my palate the dried seafood taste stands out in particular.
