My husband purchased a top quality knife set not too long ago and wanted to make sure they were properly maintained. We didn't want to use a cheap knife sharpener on these knives, so we decided to sharpen them by hand like a real Japanese sushi chef! First of all, the set comes in a nicely designed box with everything you need to sharpen your knives. The whetstone and bamboo base were carefully bubble-wrapped to keep them from getting scratched or damaged. There's also a full set of instructions that were clearly written out and easy to follow. After some practice and getting the technique down I was able to get great results. I used a slightly coarser stone i had purchased before to "roughly sharpen" my blades, but within an hour all My Lamsonsharp and Henkel Knifes could slice cleanly through a single molecule. Going thru all my steak knives and such soon. This puts a REAL edge on a knife. Be aware of your angles... it makes a huge difference. No regrets on this purchase.
