The raw coffee beans come directly from the main producing Countries in 60 Kg jute bags each, and only after having undergone sensory and chemical tests they are stocked in the warehouse and subsequently processed. Roasting is the most delicate operation in the whole production process. It is carried out using a machine called "Roaster" which is just a drum oven that cooks the beans for 18 t to 22 minutes at a temperature that goes from 200° C to 230° , with techniques that are meant to obtain evenly roasted beans. In order to respect the specific roasting needs of every bean variety, Incas has made a choice to roast them separately, dividing them by "Origin". This delicate job requires the greatest care and guarantees the best expression of every single bean variety. Once they are separately roasted, the coffee beans are then stored in big tanks, one for each single quality, for 5/7 days and then blended and allowed "to rest" for another 7 days in special blend stocking tanks.
