You certainly can't eat too much, but little and often is the best with fermented foods to gain the benefits but allow them to go a bit further. So a (clean) forkful straight from the jar is absolutely fine, or around 50g in a salad or on the side with a meal. We put 15 days on the jar but if you use clean utensils and try and keep the veg down under the liquid, they will actually last for many weeks in the fridge, even after opening.
