The healthy aspect of the high fiber is just a bonus. I found a terrific recipe online on Eating Well Magazine's website for Gingerbread Coffeecake Muffins. I double the recipe and make them as jumbo muffins and they are DElish! Found a couple of jars of this Prune Butter at a high price at the local gourmet natural food store. Knowing that you can buy anything on Amazon I placed a big order through them. As a Prime Member, I had them delivered to my home for far less than I could have gotten them locally. In baking, this prune butter adds moistness and a soft texture at such a reduced fat content.
