A bit  concerned that it was not as good as  some other serrano hams that I have purchased.It was very fatty and bonier than I expected even a small shoulder to be,Also query why a Spanish ham came from a German company?

Good piece of well prepared meat . A stand is a good thing to hold the beast in place while slicing and a fair bit of skill is needed to achieve the wafer thin cut required to enjoy this to its full . Keep the cutting face covered with a piece of lightly oiled greaseproof paper I dont like clingfilm but I suppose it works , I just dont know if it reacts with oil and grease?? Anyway , keep it covered .Just watch out for the leg or the shoulder description because they are a similar shape but have differing bone structure , quality and price .
