I keep pretty good eyes on my knives, but occasionally a paring knife will go missing. I don't know why...it's like socks in the dryer, I guess. Global knives aren't the most expensive Japanese knife on the market, but they are not cheap. They are a great value at a reasonable price. Constructed of one piece of steel, they are easy to clean and to sharpen when needed. I have used both an electric sharpener and a whetstone. The whetstone takes longer, but produced a better edge, with less erosion of the knife material. Don't expect ANY well-made knife to just stay sharp forever; it won't. The key is getting one that you can sharpen easily without damaging the blade. I would recommend Global knives for people who don't care for some of the heavier knives. I do use a Tuo Santoku knife for heavy veg such as sweet potato or for cutting a roast, etc. But for most veg and other ingredients, Globals are great knives and don't tire the hands. I have purchased several inexpensive serrated knives I the past. I should have known better. I should have bought this knife to begin with and saved myself the money I spent on lesser goods. I glides through soft items, such as tomatoes. And, for the record, I have no financial interest in these products.
