They are very flavorful, and while I agree with the other reviewers who said they can be a little on the dry side if not soaked first, it does not take long to soften them. It depends what you're putting them in, too. I'm pretty lazy, so I have not done any pre-soaking. If you're slow-cooking something that retains heat, like a thick sauce, the leeks will get soft enough without extra help.
