To the contrary, this cake has cheered me up. It is a layered cake, with crushed walnuts added for extra flavour. The honey is noticeable as a kind of richness in the flavour. I find it is an ideal accompaniment to a mug of strong black coffee. UPDATE: I did an experiment. I cut the cake into four pieces, leaving one piece for eating that day. One piece went in the coldest part of the fridge, and the remaining two pieces went into the freezer. Each piece was in a foil tray, without a lid. The piece in the fridge firmed up quickly. Still enjoyable to eat, but in a different way now. The pieces in the freezer, once thawed out, were almost as good as when they went in - still soft and light. That was a pleasant surprise. So, if there is only one or two of you and a whole cake is too much to finish off in a single day, cut the cake into smaller pieces (four, five or six pieces), put each piece in a small tray, and freeze.
