Is that why so expensive?** A: Wolf is a top tier cooking product. We have a GE Monogram range with a built-in griddle but only use the Wolf now. It's really impressive in both how well it cooks and easy to clean. **Q: What grade stainless is it?** A: The cooking surface is not stainless it’s more like a Teflon type surface. The outer part is stainless and good quality. I like it and it is well built, however I do not think it should be priced this high. **Q: Is it a double skin or insulated cover/lid? Ie, suitable for roasting?** A: The lid is a thin stainless cover it is vented but not insulated.
