**Q: Does anyone know if this is sold in one or 2 pound packages instead of 5 pounds?**
A: Don't know but there might be other brands that do come in smaller sizes.

**Q: Is this frozen or dry**
A: Dry

**Q: how can we tell if it’s hot medium or mild?**
A: Easy, it depends on what you consider mild, medium, or hot. Scientifically, there is the scoville scale which is considered the standard for deciding what is hot. I will stand by my answer of it is mild to me. (As an aside, these are powdered peppers - they have been dried, and usually all the seeds fall out, which is where most of the heat is contained in a pepper.)

I vacuumed sealed this into canning jars and use it for making chorizo. Works great for that, and tamales. I found it to be warm, but my taste of "hot" is skewed - I enjoy raw jalapenos (not pickled!) and find fresh jalapenos to be a bit sweet in flavor. I've also used this powder in seasoning while cooking. Will purchase again.

I use this powder on so many dishes, and it tastes great.  My only wish is that they would sell in a 16 oz. quantity, because I will be using these 5 pounds of chilies for years.  The smaller size was too small though.  I was ordering every week, so I finally went for broke, and now I am the Chile Queen who can feed a kingdom with chile.Great on grilled veggies (try artichokes), sandwiches, all veggie dishes, soups, salad dressings.... I haven't found a dish it doesn't compliment.
