**Q: are the hams smoked and cooked**
A: No, they are not smoked and do require cooking.  Our Country Hams are naturally air-cured with salt, sugar through the traditional seasonal process that produces a ham drastically different from wet-cured ham, also known as city ham  The flavor of a Country Ham is more complex, with an almost addictive taste, aroma, and texture that can only be described as Country Ham!

**Q: Is this similar to the jinhua ham? Salty?**
A: Yes, I think that it is very much like Jinhau Ham.  I recently watched a documentary on the curing process of Jinhua Ham and they are cured in the same manner.  For those reading this question you may be interested to know that Jinhua ham is a type of dry-cured ham named after the city of Jinhua, where it is produced, in the Zhejiang province of eastern China. The ham is used in Chinese cuisines to flavor stewed and braised foods as well as for making the stocks and broths of many Chinese soups.  Cheers, Ray Jr.

**Q: Would the flavor be enhanced if you cook this ham in a BBQ smoker at the temperatures in your dinner ham recipe?**
A: Smoked Country Ham is the preferred flavor among ham producers in the areas of Tennesee and Kentucky. Virginia and Blue Ridge Mountain Cured hams do not use smoking as part of their cure.  However, I am sure that if you use your BBQ Smoker, you will be quite pleased with your results.  I would encourage you to follow the procedures recommended in our "Owner's Manual" for soaking your ham for at least 24 hours with frequent changes of cold water.  We find doing this in a Coleman type cooler works well because it is easy to drain and refill for the water changes.  The soaking will reduce the salt content, which might be enhanced by the smoking process, as well as add additional moisture which the smoking process will deplete. For those of you who have never had Country ham, keep in mind it will be saltier and a very distinct flavor. I bought a whole ham. Slicing and skillet cooking is what I like best and the flavor was everything and more than I expected. And I’ve had plentyIf you like a cross between bacon and “City” ham, this is the ham for you.Price was very reasonable considering it was packaged well, gift worthy and came with additional items to store whole depending on how and when you may start slicing it.I will definitely purchase again

This ham was terrible and if I could I would like my money back. I made this according to directions and tried serving it to my family of 25 plus people for Thanksgiving and no one could eat it. It had very little flavor and was so salty you couldn't eat it. I prepared it EXACTLY according to the directions espically with the washing of it. Very disappointed
