Definitely not happy about it. **Q: What is the right fluidity for chocolate bars** A: I’m not sure but I have made a lot of molded chocolates with this product. As long as it’s tempered it should make a chocolate bar without a problem. Once it get’s too cold you can tell, it doesn’t flow and it begins to clump up. Temper your chocolate and begin pouring into molds. When it gets too cold you have to remelt it and retemper it or use a microwave and gently melt it in 5-10 second bursts just until it’s melted. For Milk chocolate you want it 84-86 degrees to temper. Don’t go above that if using the microwave and you can keep it in temper. if you know all this and were asking a different question, I apologize. I temper my chocolate using the tabling method and find it really simple, I can feel the second it goes into temper by the way the metal spatula drags through the chocolate so I don’t bother with temperatures but I’m just making a few candies at a time. **Q: I have a bunch of this chocolate left over from another project and don't want to buy more. I bought this to make chocolate frogs for my friends as part of their Christmas gifts, and this chocolate was perfect. Delicious, rich milk chocolate flavor that lingers on the tongue. It was hard not to eat it all myself. Would also like to mention that I have never tempered chocolate before, yet had NO trouble tempering this. Melted to around 110' over a double boiler, added a handful of unmelted chocolate, stirred until it came down to 85'. The chocolate frogs hardened up beautifully, with a nice, shiny appearance. 2 lbs. is also a generous amount and made 18 large chocolate frogs with a little chocolate left over.
