Recipes are Bitter and Consistently Fail *by R***R on Reviewed in the United States on January 11, 2020* I was really excited about this book because I was about to start a life-transforming keto diet for the first time, and needed a recipe book for small savory and sweet snacks that would work with the diet. I have a sweet tooth so the sweet part really excited me. The first thing I tried were chocolate orange fat bombs - not only were they super bitter, there was no suggestion for sweetener. When I put them in the molds, the butter separated from the rest of the mixture so I had 1/2 butter, 1/2 unsweetened cocoa balls which tasted HORRIBLE. I had to throw away the batch. I then ordered popsicle molds so I could make the matcha green tea coconut cream popsicles since I am a huge fan of matcha in general. The MINUTE I put the erythritol in the mixture, the coconut cream separated into these horrible curds, leaving me with a mixture of horrible bitter matcha coconut water and cheese-curd erythritol.This is not the first time I've had erythritol completely ruin a recipe because it just won't mix properly or chemically can't seem to work within food. I have no clue what to do. EVERY SINGLE sweet recipe I make from this book - easy recipes which I follow to a tee - fails miserably and ends up absolutely disgusting. Did the author actually make these recipes herself?? I am just blown away at how horrible this is. For people doing Keto, the idea of a sweet snack is wonderful - but these recipes are absolute failures.
