They are a wonderful part of any Asian meal in particular and Indonesian meals in particular where they are called ikan teri. They are salty and should be fried in oil that is not scalding hot. As soon as they hit the oil and they start foaming do not fry longer than perhaps a minute. Quickly remove them and let them dry on absorbent paper to soak up excess oil. Allow to call of and serve cold.
