SALTY - but shelf stable!
VERY salty - as to be expected with SALT preserved capers. Rinse and/or soak before using, or shake off the salt for certain dishes.Benefit: Shelf stable forever, so they don’t take up valuable fridge space.

Far better than capers in brine
These capers are firm and have a better texture and taste than capers in brine. They are packed with big crystals of sea salt that needs to be rinsed off before use. It's unclear to me whether refrigeration is required after opening, so I refrigerated them. I am very satisfied with the quality of the capers and the sea salt that they are preserved with.

Lower cost in bulk
It's says to rinse off the salt. You must actually pick the large salt crystals out of the strainer. Otherwise the larger crystals get dumped into what you are cooking. I keep refrigerated to extend the two week shelf life.

Good taste, but too much salt
I know these are packed in sea salt, which we wanted, but in our case the jar appears to be packed with about 50% salt or more. So the capers end up being pretty expensive considering how much usable product you end up with. The taste was good though. The capers themselves are pretty small in size.

Something for a Deticated Cook
These may not be for the casual weekend cook. There is prep-time and adventure into new and totally different flavor profile from "pickled" capers. The time is well worth the effort.

Soak Them!
Everyone who is saying they're too salty is not following the instructions. Soak these in water for 15-20 mins. Then spoon them out of the water, try to leave as much of the settled salt crystals behind as possible. Rinse them. Maybe soak them again. Then they're going to have the right level of saltiness for you!

Very Good Capers
This is the first jar of capers this size I've ever purchased. I've gotten smaller jars where salt is the curing agent. These are just as good if not better than the ones I've gotten from gourmet stores.I've use these in lemon butter sauces for salmon and in egg omelets. I take the capers and put them in a mini-strainer (metal coffee strainer) then run them under cold water until the salt dissolves, then add them to the food. I don't add extra salt when I use these capers.Taste is very good. I'd buy these again, but the jar is large enough to last me a very long time. The jar was well packed with capers with an expected amount of salt to preserve them. They appear to use less salt in proportion to the smaller jars I've used.
