Can I put a little light on everyone's worries about 'strained', 'filtered' or 'unfiltered raw honey? As beekeepers ourselves there is a distinct difference between 'strained' and 'filtered'. 'Strained' is a common process to take the raw honey through a strainer and remove impurities, like wax particles, etc. 'Filtered' is a heating process that thins out the honey to pasteurize the solution. Huge difference. 'Raw' and 'Unfiltered' are the proper applications to Crockett's honey as it is all natural, nothing is added, and it is not 'heated'. I couldn't help but notice so many reviews with folks freaking out over the term 'strained'. We are beekeepers in St. David, AZ and know all about the process for 'straining' honey. Additionally, Tempe, AZ is much warmer than our location in southeastern AZ, so their honey comes right out of the comb at a warm temperature. Straining is inevitably very easy with the warmer desert temperatures, making the process very simple and fast. But rest assured, this honey is not heated, pasteurized or filtered. Additionally there are no additives. Nothing but pure sweet desert honey. FYI, I have not been paid to report the truth about this company, and simply wanted to put everyone's mind at ease about the purity of the honey. Sleep easy, as you are definitely getting what you paid for, raw unfiltered honey.

Go For It
This is an excellent honey for the price. I have something of a honey addiction, so I've tried countless brands. This is a delicious honey that holds it's own beside higher-end brands, and even beside some I've tasted at farmers' markets. It's tasty and has a good depth of character, with a molasses/smoke undertone that I find particularly appealing in honey. I'm not giving this five stars because it's not the absolute best honey I've ever tasted in my life. However, don't let that deter you. It's plenty good. It's raw and unrefined, which, imho, is the only way to go with honey if you want a honey that has some complexity and isn't just a flat gob of mouth-puckering sugariness. It's not organic. Still, it's much better than most organic brands I've tried. Anyway, I recall reading a post from a beekeeper who wrote that organic honey doesn't exist because you can't control where bees fly. You obviously can't tell them, "hey, don't fly past this point." I haven't tried it in any baked goods yet, but I think it will stand up well. I use it to make granola bars and it imparts a fairly rich flavor.

Rich caramel like flavor…darker amber color, definitely tastes like a southwest desert honey. A mix of flower and wood.

Tastes like home
I have moved from Arizona to Wisconsin. I used to make my barbecue sauce with this brand. The quality is second to none. My only complaint is they do not sell their mesquite honey through Amazon. This honey has a nice southwest taste. It is perfect to give my mead that extra flavor note.

Crockett Honey is Sweet and Natural just like all the good fruites found in nature.
If you like the rich bold flavor of real honey and not that processed stuff they give out at those fast food places then I think this is a good choice. yes it is a little pricey but from what I've been reading just a tablespoon of raw honey has more nutritional value, more cancer fighting anti toxins then any other natural food product then it's still cost less then a doctor visit. But be forewarned, this container is not a 48 fluid ounce container. This is 3 lbs. don't forget as I did honey is measured like sugar and not as a fluid. So the container is maybe a 24 fluid oz.size.Other then that it taste good and it comes with a great seal on the container which I was happy to see as Amazon packed it along with several other items in the same box laying down at no big surprise with 5 air pillows (4 of which were flat).I look forward to using it in place of artificial sweeteners. So far it taste great in a cup of hot coffee and I'm looking forward to trying some on pancakes and maybe some honey roasted fried chicken later on, and I can't think of anything better to put on a few buttermilk cat head biscuits Yummmm! Thanks to all you good folks at Crockett, you'll probably be hearing from me again no doubt.
