Is this product a substitute for Expandex?

Yes. It's stronger than expandex so you use only 1/3 as much. I use it for gluten free bread baking and the recipe I have calls for 15 grams on expandex and I use 5 grams of this instead.

Does this product COMPLETELY dissolve in water? What happens if I put it in hot water? Will it clump?

It's a cornstarch product , so if there is not enough water it could look clumpy . It seems to dissolve fine for me . It is extra strength , so less is needed . I use it in gluten free cooking .

Is this product produced and packed in a gluten free facility?

Hi,It does not state on the package if it is or not, However, I have celiac, and have not had any problems with it. I have used it numerous times (2 jars so far) very successfully

Good quality starch

Perfect for making tapioca pearls. I used a recipe online and watched a video on YouTube. Mixes really easy, good quality starch. Will order again.

Good for tapioca pearls

On the “Bubble Tea Bandwagon” at this time. With not much else to do while stuck at home, we decided to become boba masters. Package arrived quickly and was packed perfectly. Love the canister it is in. Made awesome tapioca pearls that were natural and without all the yucky additives. We put them in honey and then added them to our teas. We had to boil them a bit longer than the average online instructions.
