Can the depth of the pilot hole be adjusted? Not talking about the beveled countersink hole but the pilot hole itself.

With the tapered bit pushed all the way into the hex shank, it still protruded 1-5/8" from the tip of the countersink . . . if you need the depth of your pilot hole to be less than 1-5/8", that will not be possible with this product.

What size screw is this for?

For softwoods you can use #8 screws with the 3/32 bit. I have even used #9 deck screws on pine without issues. YMMV.

can you replace the piloted countersink bit with an unpiloted countersink bit?

if you mean tapered, then yes. i replaced mine with a standard 1/8" bit. you can't remove/replace the countersink part, but you can adjust the depth stop to make it not used (or only barely used)
