What hydration % does this flour like? I've gone to 100%, let it soak for half an hour, and it still crumbles!

Hello, to hydrate this flour it must be knead with warm water, other way it will not hydrate, not even if you leave it to soak. It's very dry, so while you knead it, you'll notice if it needs more water if it crumbles. When the dough doesn't stick in your hands easily, you've reached the right point. This dough is now ready to make tortillas, gorditas, sopes, huaraches, tamales and even atole. Due to the nixtamalization process, this flour is not suitable for polenta, cakes or biscuits.

This is for pans in my local retail shop why is it so expensive here?
