Is this self watering or do you have to add water occasionally?

You have to add water. They have a fill tube you look down, when there is no water at the bottom you fill it back up until it comes out the built in overflow. Frequency of fill will depend on how fast your plants drink the water.

How many gallons of medium do they hold? approx?!

2 Cu. Ft. or about 15 gallons. I bought two for my wife. Put Tomatoes and Cukes in them. They are amazing, really worked great.
