What is the difference between the Edifier S350 and S360?

Among possibly other differences, soundwise, the S360 db has planar ribbon tweeters and the S350 db has dome tweeters.

since the subwoofer is stand alone wireless, so, at times if i choose to, can i turn on only both the satellites, with the subwoofer unplugged off?

Yes it does work this way and fascinatingly enough the satellites actually adjust their frequencies some to compensate for the lack of the sub. Not that they will try equal the bass that sub will do but they do try for a more full sound.

How would these work for a 2 car garage? Like home gym / working outside kind of thing.

These would light up a closed 2 car garage. You'd lose a bit of the impact of the bass with the door open but your neighbors would know what you were listening to.
