Q: Will this fit an 11" iPad pro? And a Mavic air?

iPad sorry but not a chance. Mavic Air I don't know. Wouldn't have thought so, I've got a Mavic Mini and it'd be a struggle to get that and the controller/spare batteries in. The 6L or 10L maybe. The 3L you'll get a DSLR with attached lens OR Mirrorless with attached lens and a SMALL prime. Not a lot else. Hope this helps.

Q: Would a fujifilm x-t5 with an xf f/4 16-80 lens attached fit inside? by my measurements, it's about 16x16x10cm, so maybe just a bit too wide to fit?

I don’t know that camera, but I have a Nikon D7500 with a 18-140 attached and a further 70-300 lens, the both fit in nicely.

Q: Is the Peak Design logo embossed on leather?

On the Ash model the brown leather is genuine leather. The black one has synthetic leather.
