Poor shipping start, with HAPPY ENDING.
My first order from ALMA GOURMET was delivered late by Shipper which effected the quality of the Gorgonzola cheese I ordered. ALMA GOURMET on Amazon PROMPTLY AND GRACIOUSLY REPLACED MY ORDER.Gorgonzola is a very flavorful cheese, Sweet Gorgonzola is creamier and milder. Both are good. I'm pleased with Alma Gourmet and look forward to future purchases. One of my grand ancestors was Maestro di Cucina in the Palazzo Pitti.

Mild and really Delicious!
This Gorgonzola is not over-ripe, with very a subtle bouquet. It has a spreadable texture. A mild aftertaste of blue aging caves and earth lingers in back of your throat, but very subtle. Perfect on crackers with a drop of Modena DOP thick balsamic vinegar. I'll try some on top of pizza or garlic bread. Ditto, salads. I froze mine to stop the ripening process; maybe it will render it more crumbly too.Having it shipped in winter prevents any ripening during shipping. It was very well-packed: initially wrapped in it's foil label, inside a plastic form, then inside a coolant padded foil sack with ice packs around it, then inside a cardboard box.

Took too long to ship!
The cheese was warm by the time I received it, the dry ice was warm and I had to throw the cheese away. Took a week and a half in the shipping process for it to get here. But had it of stayed cold seemed to be very good cheese!

Delicious!
My original review was rather negative as the shipping of this product left something to be desired. It arrived on time but had leaked into the shipping container. I was originally going to discard it. Rather than throw it out, I unwrapped it, drained the liquid, wrapped it in some paper towel and foil and refrigerated it for several hours. When I removed it, it was fine. The flavor was wonderful and we love it. I took the recommendation of another poster and cut it into pieces, wrapped them in parchment then in freezer bags and into the freezer they went. I will be purchasing this again. If my original review is posted, please know that I have retracted it - just couldn't find it today to do that.

Excellent
Huge chunk of authentic Gorganzola, wrapped in original foil and enclosed in a plastic container. The cheese is fresh but perfectly aged. Fatty cheeses freeze well, so I plan to cut the wedge into three and freeze two. This way of buying cheese is far superior to the "fine" cheese shops in fancy grocery stores that shrink wrap the cheese. Who wants to buy expensive cheese that tastes like shrink wrap? I don't!

Gorgonzola dolce not regular
I was sent Gorgonzola dolce. Not bad, but not what the description suggested.

A tremendous 'blu' cheese
I enjoy this cheese more than Blue cheese. It has a great blue vein and it's bite is great. On dark, hard rye it is heavenly when placed in the mouth. Hard not to keep eating the cheese at ONE time!
