Good for vegan cheese
I’ve been making vegan cheese for myself for quick/easy meal prep and lots of recipes use lactic acid and kappa carrageenan. These are usually used for better flavor and melting (compared agar agar). I tried vegan mozzarella and it came out pretty good.

Verrrrr nice!
Lactic acid is great in very small doses for adding a nice "tang" and depth to your recipes. Will be buying again. The Kappa C. Wasn't for me right away, but it was more of an experiment. Obviously many people have found uses for it! Great packaging and arrived quickly. Also being one of the only sources for these things is an advantage!

Making my own Vegan Cheese.
Im making Vegan Cheese now !! It melts wonderfully and has a wonderful flavor. I can't explain sufficiently the excitement of this culinary adventure that awaits... Well packaged with thoughtful care. Proud to have this on my shelf of ingredients.

Kappa Carrageenan Not Gelling Properly
I bought the duo pack of Druids Grove Lactic Acid and Kappa Carrageenan to save a little bit of money instead of buying them individually. The Lactic Acid seems fine, but the Kappa Carrageenan is not behaving as expected. I've used it in two different recipes for vegan mozzarella and it hasn't worked in either. The first recipe I tried to make with this Carrageenan, was a stovetop recipe for cultured cashew mozzarella. That exercise resulted in mozzarella that never set and was too soft to use. The most recent recipe I tried making was a Nora Cooks recipe, which was made by using boiling water and a high speed blender. The majority of people reviewing the recipe, shared having excellent results. The instructions stressed working quickly as the the Kappa Carrageenan gelled almost immediately. I was left with a thickish slurry that never set. To salvage the ingredients, I resorted to eventually using TWICE the amount of Kappa Carrageenan the recipe called for, then cooked the the mixture on my stovetop. It eventually thickened and firmed up enough to be usable. I followed both recipes carefully. Druids Grove Kappa Carrageenan seems to be the culprit, since adding more eventually corrected the non gelling problem. If you buy this brand, be aware that you may need to use twice as much to get the intended results. Kappa Carrageenan is an expensive ingredient, having to use double the recommended amount makes it absurdly expensive. I reached out to the company for help with this and am waiting for a reply to my question if they test the gelling property of batches of their Kappa Carrageenan. This batch seems to be way off. Worked as intended for vegan cheese-making!
This was my first experience using Kappa Carrageenan and Lactic Acid - which I needed for some cheese recipes from The Non Dairy Evolution Cookbook ( highly recommend too!) - and they worked perfectly! Thanks!
