In my youth, I started using a regular table fork for light mixing. Over the years, I kept up this practice. One day, while making pie dough at a friend’s house, I asked for a fork to use. She handed me a serving fork. What a game changer that was. Now I’ve started baking sourdough, and the search for the best fork for mixing began. I had been using a long table fork that I bought at GW. It works great for mixing starter at feeding time, but when it comes to mixing the actual dough, that long table fork struggled to stay in one piece. I bought 2 mixing/ serving forks from amazon. The Patelai is a little longer and thinner, while the head and tines of the GoGeiLi are a bit wider. Truth be told, I liked the shape of the Patelai better—but I never even tried it. It was returned. Too expensive. Even now (3/2/26), at a discounted price, it’s still too much. I wouldn’t pay more than $6 for it. The GoGeiLi set is the winner and made short work mixing up a batch of sourdough. Didn’t even feel the slightest of bends.The two extras will double as back-up and serving.
