Great Product
My Italian grandparents came from Italy and made these products the old school way. Umai makes it just as good if not safer and better.

Made some decent peperoni. Could be a bit spicier but the UMAi system is great. Put it in the fridge and check it in 2 weeks. No continuous monitoring of temp and humidity.
