The noodles were a bit gummy, and I may have not cooked them properly, but was alright.

I was taught by a Chinese restaurant chef to soak any rice noodles and vermicelli in cold water for twenty minutes and then boiled it till it was soft or put it in the hot broth right before serving. Great for any type of chicken soup and kids love it a lot.
