100% Soba
This is 100% soba/buckwheat. Most soba noodles are blended with other flours, so if you haven’t tried 100% soba noodles, try these. The boiling water turns very cloudy and thick. Traditionally, that water(sobayu) is served in a teapot or a cup to serve on the side with noodles. Sobayu is mixed with the tsuyu (soup) for the noodles to drink. This soba is drier than the blended. Don’t overcook.

Note these are 3-packs (ie if you chose the "pack of 3" option you get 9 packets of soba which is great). If you're on a certain well-known diet plan where wholegrain noodles are "free", this is the noodle for you; unlike many of the soba noodles you get in store, these contain no wheat flour. They are listed as 2 servings per packet but that's for 100g; note that standard US serving sizes for dried pasta is 2oz, so by that measure you're getting 3 servings per packet not 2. With buckwheat soba the challenge is sticking together and turning into mush; separate well when putting in the pot, allow for ample water and a bit of sesame oil, and cold-bath them after 4 minutes for the right texture for salad.

Too coarse
Grew up eating zarusoba in Japan. I have never thought about 100% buckwheat, 9:1 or 8:2. It is too course for my taste. 100% buckwheat has many health benefits, but note some risks as well especially for those who did not grow up eating buckwheat.

100% buckwheat is hard to find.
Great product. Be careful not to overcook, so follow the instructions. You can drink Soba-yu (hot water in the pot after cooking soba noodles).

If you like spending $10 on a very small package of pasta, this is for you.
I bought the 3 pack because the other review said it was really 9. That seemed reasonable for the cost, but unfortunately no, the 3 pack is literally 3 small packs of buckwheat pasta for $30~. Like less pasta than what normally comes in soba packs. These folks must be making a killing on price gouging.
