Do these work with 48v systems?

Per Victrons website it will do 12, 24 or 48v

will this replace the shunt that comes with the BMV-712 smart?

It does not. The Lynx shunt connects to the Cerbo GX monitoring system for battery monitoring.

Does this include the nut, washers and bolt to connect to the battery cables?

No. Battery cable is normally connected to a lynx power in or lynx dis.
