How about using this to glue Leather to Wood?

I have not tried it, but I think it would work very well. You coat both pieces with the glue and let it mostly dry, then put the pieces together for a strong bond with a roller of some other method to press the pieces together.

What is the square foot coverage of this product

I can't give any definitive answer, they porosity of the substrate would make a difference. I used it for a countertop and covered very well, I had more than enough. It says it requires 3-5 grams for square foot but I doubt that would really happen. That would give about 80 square feet of coverage. I would expect a little less than that. This stuff has very little odor and works just fine!

Will it work OK for automotive applications - like glueing carpet to the car's floor?

Yes, but if you make a mistake, you will ruin the carpet trying to remove it. I think there are better glues out there, like 3M super 77 or 90 for this type of project. Both are spray adhesives.
