Much easier and more efficient than a water bath canner
I will be making comparisons to a traditional water bath canner (like the granite ware ones), and will state whether it’s a pro or con. This canner uses a lot less water, which in turn, requires less energy and time to heat (pro). It’s lightweight, lighter than my granite ware even without water and especially with water. That means emptying the water after canning is much easier (pro). It has a max processing time of 45 minutes. It shouldn’t be used to process over that time, or the canner may run dry and cause damage. That makes it tricky when canning tomato products, which can take 35-50 minutes under 1000ft (processing time gets longer the higher the elevation). I personally do not risk it, and only can pickles and fruit in the steam canner, and use the water bath canner for tomatoes. If all you’re canning is pickles and fruits, this is the superior choice. Rather than waiting 30-45 minutes to heat a water bath canner for something that only takes 10 minutes to process, this is the better solution. If you’re only canning tomatoes, don’t buy this canner (con). Size wise, this holds 7 quarts, same as my water bath canner. Some miscellaneous comments: The indicator knob on top has an odd design. You’re supposed to calibrate the canner before you use it the first time and at the beginning of every new canning season. There are instructions in the manual on how to do that. But when you look at the indicator, it has those green zones for your elevation for when to start timing; those don’t mean anything, they’re useless background. You have to make a mark when you calibrate when it’s full of steam, then you start the timer. I question why they added those green zones when it actually has no meaning. (as shown in the picture, I marked it too early, but I know to start time when it goes past the line I made) I’ve used this canner about five times, and the inside changes color based on where the water was sitting. The rack and the bottom pan look different than when I initially received it and used it for the first time. It seems to be just a visual change, and hasn’t caused any problems.

Worked like a charm
I bought this steam canner to replace a much older model I'd used for years. There wasn't much left of it and I had considered purchasing a water bath canner this time around. There's always questions of food safety with steam canners and I have to admit, though I'd canned with one for years and rarely had a problem other than an occasional jar breaking during processing or one never sealing, I was starting to doubt myself. But as I clicked "purchase" on a water bath canner, I started thinking about my back issues and hauling a bunch of water to and fro, and the fact that I need a new oven and I want a ceramic top to replace my gas, and there are studies that have found steam canning to be safe when done correctly. So, I cancelled my water bath canner order and sent out for this one. Within two weeks, I had canned around 60 quarts of applesauce (My kids love the stuff with their dinner and people kept throwing apples my way. ) and didn't have a single issue. Everything sealed, nothing broke during processing, the canner was easy to use and everything processed beautifully. I love the gauge at the top that tells me when to start timing according to my elevation and I love how little water sputtering there was (my last canner spit water everywhere, even when I had filled it correctly), and I love how easy it was to move and clean and refill. Yeah, I made the right choice. Steam canning has served me well and I think it will be even better now with this truly awesome canner.

Safer, Faster, Just What I Wanted!
I just tested this product - I did not can anything since it's the middle of Winter here in Wisconsin, but I just had to see how it worked. Thought it was a good idea anyway to give it a whirl before I actually had things ready to process. It takes just a bit less than 3 quarts of water to fill it to the correct level - SOOOO much less than a water bath canner! It came up to temp in about 15 minutes. I would guess that it takes at least 30 to 40 minutes to get a full water bath canner up to temp. All that extra water and all that extra energy to heat that water is why I got this steam canner! You know you are ready to start processing when the temperature gauge is in the green. You can't see it in the pictures - the gauge is built into the handle on the top. I've attached a picture that shows the gauge. When I was done with my test, I just lifted the base by the sturdy handles and carefully dumped the hot water into my sink. So much safer to have just that small amount of water rather than gallons and gallons! It also struck me that it will be so much easier to remove the jars when they are done. They will be sitting so much lower compared to up in the wire basket of a water bath canner. My last comment is that with the current model (purchased 02/2015) they have solved a problem that some of the other reviews have mentioned and that was an unstable, wire like base inside the canner that allowed the jars to "tilt". They recommended getting another part for another canner that was flat so that the jars did not tilt. The canner I got has a nice flat, sturdy metal "stand" that goes in the bottom of the canner to hold the jars above the bottom of the canner. Jars setting on that sit perfectly flat, so the other part that was recommend is no longer needed. 07-26-2015 Just starting to do some canning for the season - processed some pints of Blueberry Jam this morning - incredible! I was done processing and had the jars cooling and the canner put away in the time that a water bath canner would have taken to come to a boil to START the processing!! And it was so nice to grab the jars from that low base rather than from the basket at the top of a water bath canner. And I should mention that all 9 pints sealed. ;-) Next up will be processing Dilled Beans! (those are pickled - so are not low acid, so do not need to be pressure processed).

Super Easy To Use -Good For Novices!
I wanted to start canning to try and save a little money and hopefully cut out some of the over processed foods. I have a really small galley style kitchen so I was not looking forward to buying a big water bath canner and trying to process a lot of cans all at once. When I was looking into canning best practices I ran across steam canning, and decided to give it a go. I ordered my Victroio and have used it three times now. It is great! I can make small batches of jellies, jams and sauces in the morning clean up and be ready to cook lunch and dinner. You can use the same recipes that you would use for water bath canning, they do need to have at least a 10 minute process time. So if you are looking to dip your toes into the canning world this is a good place to start.

Arrived in Perfect Condition
This item was just delivered. I immediately opened the box to make sure it wasn't dented or damaged in any way. It's in perfect condition. Quite some time ago, I ordered a steam canner on Amazon, but Amazon wasn't the seller. When it was delivered, it was bent and out of round so there is no way it could function as it is designed to. The seller did refund my money, but I was hesitant to try again. I'm very happy that this one was delivered in perfect condition and look forward to using it next year. Mine came with a flat rack, not a wire one. Most years, I can quite a few jars of tomato products and some years I can some pickles. Most of the other things I can require a pressure canner. I have an All American 910 and a vintage All American 915 that handle those things. Over the past few years, I've read a lot of reviews and recommendations for steam canners. From what I've read, they offer several advantages. Since you use far less water in them, it greatly reduces the time required to bring the water up to temperature for processing. Another advantage is that the jars are easier to load and unload because they aren't submerged under water. Last, but not least is the weight factor. Instead of having to lug a large pot filled with hot water to the sink when you're finished, only the bottom of this unit holds water (far less water) and is much lighter to carry. Processing times remain the same, but the time it takes to get there and the work involved when you finish should be less with a steam canner. The one I purchased before was a different brand. I really like the coated handles on this one and the dial on the knob is a bonus. I still have two large water bath canners and a large, deep pot with a canning rack that can handle several jars. I have a feeling that once I get used to using the steam canner, I'll get rid of one or more of my other canners. Since I'm an urban gardner who competes with squirrels, rabbits, insects and birds for our produce, I don't can huge amounts at a time. The squirrels steal all of the fruit and nuts from our trees so I never get any of it to can.

This is so much better than water baths for jars - but read the instructions before use!
I learned about this method a while back and it's the only thing I use for canning now. So much easier and safer than a giant pot of boiling water! Steam and boiling water are the same temperature - so that's the idea here. Wonderful little gadget to have if you make jams, jellies and pickles. NO - this is not a pressure canner so you can't do meats and veggies. Please understand what you are canning and which method you need to use for safety. NO - this won't explode. While it's a steam buildup inside the unit that "cans" the items, there is a steam vent hole on the back side to let excess escape. Please be careful. And NO - this is not an instructional review - please read the directions and watch a video. But YES - I do recommend if you understand the product and are willing to read instructions.

My new favorite canner
I love my new canner! I don't do a huge amount of canning, just some small batches throughout the season. I got tired of pulling out my water bath canner everytime I wanted to put up 3 or 4 items. The use of so much water everytime I wanted to can, as well as the energy cost in terms of money and time spent waiting for it to come to temp was off putting to me. I purchased this due to its much less water requirement, which meant less mess and time waiting for it to boil. I'm much more likely to use it because it's just so much easier! Another benefit I found is that my kitchen doesn't heat up so much using this item. Canning days were always hot and humid and lasted for hours afterward. This item heats a minimal amount of water so fast, and cools down fast too I experienced no discomfort in the kitchen at all. I have found all jars sealed as well as traditional water bath canning. So far I've had no jars that failed to seal.

It's a STEAM CANNER
Some people are claiming that it leaks steam and never comes to pressure. Id like to add that it is a steam canner and not a pressure canner.

I use this ALL the time 10/10 brilliant
I’m in the country women’s association in Australia and I make a LOT of jams and pickles etc.. this is convenient and easy to use.. lightweight and easy for re sanitizing jars as you are on the go. Recommend you put marbles in the base incase you get low on water.. makes a noise. Or the base could warp if it boils dry.

a great product at half the price compared to the very few other suppliers in this country
Arrived in good time with a small ding in the side that I assume happened in transport . Very easy to put together , you will need a pz2 screwdriver or similar . Set up and calibrated easily just follow easy instructions . The price is great no import duty or shipping charges from the US .
