Are the trays removable?

The middle three trays are but the top and bottom trays are not. Those are screwed in to keep the whole thing together.

How do you attach labels?

This does not come with labels to attach. If you wanted to attach labels, I would use the side of each tray to tape a label.

can this hold laptops instead of paper?

IPads or Chromebooks, but not a laptop. My laptop is 14" wide, and this product is only 12". I wouldn't say that the wire mesh shelves are all that strong, either.
