Powdered coconut oil? i shudder to think the processing that turns oil into powder. will that affect the d3 absorption?

I don't know but I would think the oil would be more likely to effect absorption it it were in liquid form than in powder form. It's common for coconut oil or other oils to be added to Vitamin D supplements. At least its a healthy oil and not a bad toxic oil.

What are the "vegan", "veggie" capsules made out of? I see what's in them, but what is the actual shell made of? Does it have rice in it?

No, it does not contain rice. Vegan capsules are typically made from cellulose as hydroxypropylmethylcellulose or hypromellose derived from plants. A small number of companies use vegan capsules made from pullulan instead which is also derived from plants. Those are the only things vegan capsules are made from.

What is the size of the capsule?

I don't have the exact dimensions but the capsule is about 0.75in long and less than .25in in diameter. I wish Amazon would let me post a picture for scale.
